Mini Carrot Muffins
Pre heat oven to 350 degrees. Lightly oil mini muffin tins.
Ingredients:
2 cups Auntie's Gluten Free All-purpose Flour
1 ½ tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp organic cinnamon
½ tsp organic all-spice
200 ml organic apple sauce Approx. ¾ cup
¾ cup honey
2 eggs
1 tsp GF vanilla
2 cups finely grated organic carrots
Directions:
Mix baking powder and soda together first then add flour, salt,and spices, blend well. Set aside.
Mix honey and applesauce together. Add eggs, carrots and vanilla. Beat until eggs are incorporated well. Slowly add dry ingredients mix together
Fill prepared muffin tins. Bake for approximately 15 minutes.
