Auntie’s GF/DF Chocolate Cake with a Blackberry Mousse and Vanilla Non-Dairy Buttercream

Vanilla Non-Dairy  Buttercream Frosting

1 lb non dairy butter( ie Smart Balance or Earth Balance)

3 lbs sifted powdered sugar

2 tsp vanilla or 1 ½ tsp vanilla paste

2 tsp organic unsweetened rice milk 

In mixing bowl, cream non-dairy butter until smooth.   Add 1st half of sifted powdered sugar, vanilla and rice milk.  Mix well. Slowly add remaining sifted powdered sugar. Beat until smooth and creamy.  Add a couple t If frosting is it a little too soft refrigerate for 30 minutes before using.

Lemon Non Dairy Buttercream

1 lb non dairy butter( ie Smart Balance or Earth Balance)

3 lbs sifted powdered sugar

1 tsp vanilla or 1/2 tsp vanilla paste

Zest from one large lemon 

1 TBSP fresh lemon juice

In mixing bowl, cream non-dairy butter and lemon zest  until smooth. Add half of the sifted powdered sugar, vanilla and lemon juice.  Mix well. Slowly add remaining sifted powdered sugar. Beat until smooth and creamy. If frosting is  a little too soft, refrigerate for 30 minutes before using.
