Gluten Free Chocolate Cake/Cupcake
2 cups sugar (I prefer raw)
1 ¾ cups Auntie's GF flour
¾ cup cocoa
1 ½ tsp Baking Powder
1 ½ tsp Baking Soda
1 tsp sea salt
2 large eggs
1 cup coconut milk/rice milk or milk
½ cup vegetable oil
2 tsp GF vanilla extract
1 cup boiling water
Preheat oven to 350. Prepare baking dishes
Combine dry ingredients in mixer. In a separate bowl, put all wet ingredients together and mix (except boiling water) Mix drys and wets together. Make sure not to over mix. Add boiling water to batter and mix well. Bake for 30-35 mins. Makes 24 cupcakes or 2 – 9 inch rounds.
