Gluten Free Lemon Struesel Bars
Crust/Streusel:
¼ cup margarine/butter (I used Earth Balance)
¼ cup sugar (raw sugar is wonderful)
1 tsp fresh lemon rind
1/8 tsp sea salt
1/8 tsp gluten free lemon extract
1 cup (sifted) Auntie's Gluten Free All-Purpose Flour Blend
Filling:
2/3 cup sugar
3 TBSP Auntie's Gluten Free All-Purpose Flour Blend
¾ tsp baking powder
1/8 tsp sea salt
½ cup fresh lemon juice
3 large eggs
Preheat oven to 350 degrees.
Prepare 8x8 pan with either parchment or spray with a gluten free cooking spray. Set aside.
Place first 5 ingredients into medium bowl/mixer. Beat gently until creamy about 2 minutes.(if using butter beat on medium) Slowly add your sifted flour to butter mixture beating on low speed until mixture resembles a coarse meal. Take 2/3rds of mixture and pat into bottom of your prepared pan. (About 1 -1 1/3 cup mixture) Bake for 12 minutes or until crusts starts to turn lightly brown.
Prepare Filling:
Mix your dry ingredients together in a medium size bowl. Squeeze your lemon juice into a separate bowl making sure to strain out the seeds. Add eggs to lemon juice beat gently. Add liquids to your dry ingredients. Mix well. Pour your filling mixture onto crust as soon as it comes out of the oven. Return to oven to bake another 12 minutes. Remove from oven add remainder of streusel evenly across the top, bake another 10 minutes or until set. Leave in pan until cooled completely. Once cooled lightly coat with sifted powdered sugar. Enjoy!
